Bruschetta in Minutes

  • 1 loaf of french bread
  • 2-4 tomatoes (depending on size)
  • olive oil
  • 1 bunch of fresh basil
  • fresh garlic (to taste)
  • ¾ cup of Parmesan, Romano or similar grated cheese
  • salt & pepper (to taste)
  1. Roughly chop tomatoes into ½" pieces
  2. Chop or tear basil into small pieces
  3. Mix the tomatoes, basil and garlic in a bowl and set aside
  4. Slice the bread 1" thick
  5. Brush or drizzle oil evenly on each slice and place on a foil-lined cookie sheet
  6. Place a heaping teaspoon of the tomato mix on each slice of bread
  7. Top with a heaping tablespoon of cheese; then salt and pepper to taste
  8. Cook under the broiler or in a 450 oven for 5 to 10 minutes
Fast and easy; just watch as it bakes so the bread and cheese don't burn

I’ve made bruschetta a couple of times now, to rave reviews. Just for the record, you can use garlic salt if that’s all you have. I’ve also used 2 different olive oils and the white truffle oil pictured here.
